Key Lime & Cranberry Swirl Pie Recipe
There are dozens of versions of key lime pie, especially popular in Florida and places where key limes are grown. However, key limes are now available everywhere, and even though they are small and take a bit of work to juice, they are worth it. You can even purchase bottled key lime juice. My family prefers a light and airy pie, as opposed to the classic heavy, overly sweet pie served in a lot of restaurants. For the holidays, I decided to swirl my pie with my favorite Cranberry Orange Filling that I use in dozens of recipes, and it turned out so good, I’ll be serving it at my family Christmas dinner alongside the figgy pudding.

Crust:
1 1/2 cups graham cracker crumbs
4 tablespoons melted butter

Filling:
3 large eggs, separated
1 large egg
1 14 oz. can sweetened condensed milk
1/3 cup fresh lime juice, key lime is best, but regular lime is good too
zest of 1 lime

1 cup Cranberry Orange Filling

Garnish:
Sweetened whipped cream
Lime zest
Fresh cranberries

  1. Preheat oven to 325°.
  2. Mix the graham cracker crumbs and butter; press into a deep-dish 9" glass pie pan.
  3. Bake 10 minutes or until firm; remove from the oven.
  4. Whisk together the 3 egg yolks, whole egg, condensed milk, lime juice, and lime zest.
  5. In a separate bowl, beat the egg whites to stiff peaks.
  6. Fold the beaten egg whites into the lime mixture and pour into the prepared pan.
  7. Drop spoonfuls of the cranberry orange filling evenly into the pie and use a knife to swirl slightly.
  8. Bake 15 minutes or until set; remove from the oven and cool thoroughly.
  9. Wrap the pie in plastic wrap and refrigerate at least eight hours or overnight.
  10. When ready to serve, pipe with sweetened whipped cream and sprinkle with additional lime zest. Place cranberries decoratively on the whipped cream.
